The French Connection at Hilton Kota Kinabalu

KOTA KINABALU: Elevating Kota Kinabalu’s palate to an international level, the city’s latest addition of culinary and gastronomic affair- the Rooftop Poolside Bar & Grill that was opened in April this year has another exciting offering on its menu – French black truffles which are available throughout the month of August.

Chosen to complement the casual luxury feel of the restaurant, executive chef Luis Zamora explains why the perigord is the restaurant’s choice of the month for this summer.

‘After witnessing how truffles were harvested in my recent visit to France, I was very impressed by how loved they are by the harvesters.

“They fondly refer to these truffles as black gold, not far off the mark as how 18th century French gourmand Jean-Anthelme Brillat-Savarin called them – the “diamond in the kitchen.

Zamora stayed in a lodge in south west of France and tried three different dishes infused with truffles.

“They all tasted amazing and different to one another. After that, I wanted to bring a little bit of France to Kota Kinabalu so that everyone can taste what I had experienced,” he added.

For something light and easy, enjoy the seafood chowder made with seafood fritter and fresh herbs for only RM22 nett.

For starters, savour the taste of scrambled eggs on sourdough served with sautéed mushrooms and Parmesan cheese or grilled black olive crusted scallop served with green pea puree, honeyed beetroot, lavosh crackers and fresh herbs for only RM40 nett per dish.

Mains selections include fusion dumplings served with sautéed forest mushrooms, parmesan cheese and truffle cream sauce for only RM44 nett or the duck confit served with caramelized 2 onions, grilled garden vegetables, pomme puree and truffle orange sauce for only RM88 nett.

For something a little bit extravagant, choose to experience the black gindara and scallops served with seafood chowder, shimeji mushroom and asparagus at only RM88 nett per serving or the Land and Sea, featuring a black angus tenderloin served with pomme puree, caramelized onions and grilled garden vegetables for only RM175 nett per serving.

The Rooftop Poolside Bar & Grill is located on the 11th floor of Hilton Kota Kinabalu and is open from 12.00noon until 10.30pm daily.
